The use of Alfalfa hay has become important not only in the diet of chickens, but also in all animal feed in recent years, due to its high protein content. It is grown as an important fodder plant in many countries around the world. It is used for grazing, grass, silage, and green manure as well as for cover crop. The name Alfalfa is used in North America. The name Lucerne is a widely used term in the UK, South Africa, Australia, and New Zealand. This plant is very similar to the clover (a cousin of the same family), especially when it was young, when the trifoliate leaves covered with round leaflets. Later in maturity, the tracts are expanded. It contains clusters of tiny purple flowers followed by 2 to 3 twisted fruit containing 10-20 seeds. Alfalfa is found in warmer climates. It has been cultivated as fodder for at least as far back as the ancient Greeks and Romans. Alfalfa sprouts are a common ingredient in dishes made in South Indian Cuisine.
